Looking for something low carb and tasty? These pizza bites were a hit even with the non low carb family members.
Start with cutting up pepperoni into quarters and separate. In a large bowl, add 2 eggs to 1 lb of ground Italian sausage, a cup of almond flour, 1 ½ cups of shredded mozzarella cheese and what is supposed to be ½ cup of grated parmesan cheese but my kids ate it all, some butter and baking powder.
Mix together well and roll into balls and place on parchment paper and bake for 20 minutes at 350 degrees
I served mine with low carb marinara sauce. I used Rao’s
Ingredients:
1 lb browned ground Italian sausage
2 oz pepperoni (about 27 slices)
2 large eggs
1 cup almond flour – no ya don’t taste it
1 ½ cups shredded mozzarella cheese
½ cup grated parmesan cheese
2 tbsp softened butter
2 tsp baking powder
