🍽 Low Carb Chicken Fried Rice Recipe

Scrambled Eggs

  • 3 eggs, beaten

  • 1 tbsp butter

Cook the eggs in butter until scrambled and set aside.

Chicken

  • 2 lbs diced chicken

  • 1 tbsp butter

  • ½ tsp ginger

  • ½ tsp garlic powder

  • ¼ tsp red pepper flakes

  • Salt + pepper

Cook chicken in butter with seasoning until cooked through. Set aside.

Cauliflower Fried Rice Base

  • 1 tbsp butter

  • 2 (10 oz) bags frozen cauliflower rice

  • 20 oz bag stir-fry veggies (optional if you want fewer carbs)

  • 1 chopped green onion

  • Salt + pepper

  • 2 tsp Swerve

  • ½ tsp garlic powder

  • ¼ tsp red pepper flakes

  • ½ tsp ginger

  • 3 tbsp coconut aminos (I always add an extra splash!)

  • 2 tbsp sesame oil

Cook cauliflower rice in butter. Add veggies and cover, stirring occasionally until softened. Add sweetener, spices, coconut aminos, and sesame oil. Let marinate for 3–5 minutes.

Then add the cooked chicken and scrambled eggs back in and heat through.
