⭐ Low Carb Chicken & Broccoli Soup (Crockpot Version)
This soup is thick, creamy, cheesy, and packed with protein — everything you need to stay full longer and keep your blood sugar stable.
Instructions
In a crockpot, add 2 lbs of cubed chicken breast.
Chop 4 cups of fresh broccoli into bite-sized pieces and place them on top of the chicken.
In a bowl, combine all the cheese-sauce ingredients:
softened cream cheese
shredded mozzarella
shredded cheddar
sour cream
heavy whipping cream
minced garlic
onion powder
smoked paprika
salt & pepper
Whisk everything together until smooth and creamy.
Pour 1 cup chicken broth into the crockpot, then spread the cheese mixture evenly over the broccoli. Add extra broth if you prefer a thinner, more “soupy” texture.
Place the lid on and cook on LOW for 3–4 hours.
When done, stir well until the cheese sauce has melted into the broth and everything is beautifully combined.
Serve it up and enjoy every cozy, creamy spoonful. 😍
