  • 2 lbs ground beef

  • ½ onion, chopped

  • 16 oz cottage cheese

  • 10 oz can Rotel (diced tomatoes & green chilies)

  • 1½ cups shredded Mexican blend cheese

  • 2 tbsp diced green onions

How to Make One Pan Low Carb Taco Casserole

  1. Preheat oven to 375°F.

  2. In a large cast iron skillet or oven-safe pan, sauté the chopped onion until softened.

  3. Add ground beef and brown until fully cooked.

  4. Drain excess grease.

  5. Add taco seasoning and stir until well combined.

  6. Flatten the seasoned beef evenly in the pan.

  7. In a bowl, mix cottage cheese and Rotel.

  8. Spread cottage cheese mixture evenly over the beef.

  9. Top with shredded Mexican blend cheese.

  10. Sprinkle with green onions and sliced jalapeños.

  11. Bake at 375°F for 20 minutes.
