These Low Carb Jalapeño Chips are crunchy, cheesy, a little spicy, and incredibly filling. They’re perfect as a snack, appetizer, or even a side when you want something fun but still aligned with a low-carb lifestyle.

Low Carb Jalapeño Chips Recipe
Ingredients
12 pickled jalapeño slices
Shredded Colby Jack cheese (or Mexican blend)
Sour cream, for dipping
Instructions
Preheat your oven to 400°F.
Pat dry the jalapeño slices with a paper towel (this helps them crisp up).
Add a small amount of shredded cheese to each cavity of a muffin pan.
Place one jalapeño slice on top of the cheese.
Cover with a little more shredded cheese.
Bake for 10 minutes, or until bubbly and golden.
Transfer chips to a paper towel to absorb extra grease and allow them to cool.
Serve with sour cream and enjoy!
