Low Carb Mexican Style Chicken Mozzarella Sticks

In fact, the secret to staying consistent (especially in perimenopause and beyond) is having simple, delicious, high-protein recipes that don’t require a bunch of ingredients or time.

And listen… I was skeptical about this one. 😂But I tried it and I’m officially obsessed.

  • Low carb

Cheesy Taco Chicken Sticks (Air Fryer)

What They Taste Like

Think: crispy taco-seasoned chicken on the outside… with melty pepper jack cheese in the center. It’s like a taco + mozzarella stick had a low-carb baby. 😍

And dipping them in salsa? 10/10.


Ingredients

You only need 4 ingredients:

  • 1 lb ground chicken

  • 1 tbsp taco seasoning (my fave is FlavorGod because it’s sugar-free)

  • 4 pepper jack string cheese sticks

  • ½ cup grated parmesan cheese


How to Make Cheesy Taco Chicken Sticks

Step 1: Season the chicken

Add 1 lb ground chicken to a bowl and mix in 1 tbsp taco seasoning.

Pro tip: FlavorGod taco seasoning is my favorite because it doesn’t sneak in sugar.

Mix it up really well so that seasoning gets in every bite.

Step 2: Stuff with cheese

Divide the chicken into 4 portions.

Place one pepper jack string cheese stick in the middle of each portion and wrap the chicken around it until fully covered.

You’re basically making a cheesy chicken “log.” 😂

Step 3: Coat with parmesan

Roll each chicken stick in grated parmesan so the outside gets that crispy crust.

Step 4: Air fry

Place in the air fryer and cook:

400 degrees for 15 minutes✅ Flip halfway through (around minute 7–8)

If they’re not crispy enough when time is up, pop them in for another 2–3 minutes.

Step 5: Dip + enjoy

I dipped mine in salsa and it was SO good.

Other dip ideas:

  • sour cream

  • guacamole

  • sugar-free ranch

  • queso
