Low Carb Italian Bake


Save this recipe, it’s low carb, tastes amazing and is super hearty.


Start with boiling 1 cauliflower cut into florets for 3 minutes, drain and set aside.


In a skillet, cook a chopped onion in oil until softened then add minced garlic and red pepper flakes, cook for a minute and then add ground beef along with salt and pepper.


Once browned, add tomato paste and oregano, cook for a couple minutes then stir in a can of crushed tomatoes. Reduce heat and let simmer for 15 minutes.


Spray a baking dish and place the cauliflower in the bottom then cover with the ground beef and top with ricotta cheese and shredded mozzarella cheese.


Bake at 350 degrees for 25 minutes.  This is the type of food I’ve eaten to lose 70lbs and not feel deprived.


So good and filling!

 

Ingredients

1 tbsp avocado oil

1 onion (chopped)

2 cloves of minced garlic

1 pinch of red pepper flakes

1 lb ground beef

2 tbsp tomato paste

1 tsp oregano

1 can crushed tomatoes (28oz)

1 caulflower (cut in florets)

2 cups ricotta cheese

2 cups shredded mozzarella cheese

Salt and Pepper to taste
