Bruschetta Chicken
Start with the marinade for the chicken
2 tbsp olive oil
2 tbsp balsamic vinegar
1 tsp minced garlic
1 tsp Italian seasoning
½ tsp salt
Whisk together and pour over 4 chicken breasts, turning them to coat evenly. Set aside for 10 minutes as oven preheats to 425.
You’ll cook for 30 minutes
The bruschetta
1 ½ cups halved cherry tomatoes
½ small red onion chopped… I used more cuz I Love it!
1 ½ tsp minced garlic
1 tsp balsamic vinegar
1 tsp olive oil
2 tbsp basil… would rather use ½ cup fresh chopped basil
½ tsp salt
After chicken is done, sprinkle 1 cup of shredded mozzarella cheese on top, cook 5 minutes
Then put bruschetta on top and cook another 5 minutes.
