Low Carb Breakfast Quiche: A Simple Recipe from My Weight Loss Journey

One of the biggest lessons I’ve learned on my 70 lb weight loss journey is that food doesn’t have to be complicated to be delicious—or to fit your goals. I used to think “eating healthy” meant bland chicken and steamed broccoli on repeat. But what I’ve discovered is that you can make simple swaps, use fresh ingredients, and end up with meals that taste amazing and fuel your body.

This low carb breakfast quiche has become one of my favorite go-to recipes. It’s quick, full of flavor, and fits perfectly into my macros. Plus, it feels like you’re eating something fancy, when really it only takes a few minutes to put together.


Ingredients

  • 1 low carb tortilla

  • 2 cups fresh spinach, chopped

  • 4 eggs, beaten

  • ½ cup feta cheese

  • 1 cup diced tomatoes

  • Salt & pepper to taste

  • 4 slices cooked bacon, crumbled


Directions

  1. Preheat your oven to 350°F.

  2. Place a low carb tortilla in a pie pan—it will act as your crust.

  3. Layer in the chopped spinach.

  4. Pour the beaten eggs evenly over the spinach.

  5. Add the feta, tomatoes, and season with salt & pepper.

  6. Bake for 25 minutes until the eggs are set.

  7. Remove from the oven, top with crumbled bacon, and cut into 4 slices.

That’s it! Breakfast (or lunch… or dinner) is served.


Make It Your Own

The beauty of this recipe is that you can easily adjust it to meet your protein needs:

  • Use a high-protein tortilla wrap.

  • Add a couple more eggs to the mix.

  • Top it with cottage cheese for extra creaminess and protein.
