Okay, this might sound a little crazy… but trust me, bacon + pumpkin + cheese = one of the BEST fall-inspired low-carb recipes I’ve made in a long time.

These Bacon Pumpkin Chaffles are crispy, savory, and have just the right hint of pumpkin spice. Perfect for breakfast, brunch, or even a fun low-carb dinner twist. Plus, they’re totally keto-friendly and quick to whip up. 🍂


Bacon Pumpkin Chaffles Recipe

Serves 4

Ingredients:

  • 4 slices of bacon

  • 2 eggs

  • ¼ cup pumpkin puree

  • 2 tsp pumpkin pie spice

  • 2 tsp coconut flour

  • ½ tsp vanilla extract

  • 1 cup shredded mozzarella cheese

Directions:

  1. In a bowl, whisk together eggs, pumpkin puree, pumpkin pie spice, coconut flour, and vanilla extract.

  2. Stir in shredded mozzarella cheese.

  3. Preheat and spray your mini waffle maker.

  4. Place a slice of bacon down first, then spoon in ¼ of the batter. Spread it out and close the lid.

  5. Cook for about 3 minutes until crispy.
