This dinner is a great example of the food I ate to lose 70 lbs.
Less than 5 net carbs and high in protein, it is right up my alley!
Start with seasoning 3 chicken breasts with your favorite oil, salt, pepper, paprika and chili flakes then let it marinate 1 to 2 hours in the fridge.
Then fry in olive oil on medium heat until cooked thoroughly.
Remove from heat and add butter to the skillet along with sliced onions and sauté for about 10 minutes.
Add some almond flour, chicken broth, heavy whipping cream, sour cream and some more seasoning. I added some xanthan gum to thicken the sauce.
Add your spinach and stir until it begins to wilt and then pop the chicken back in and let simmer a couple more minutes.
This is super filling and tastes AMAZING! No side dish needed.
Ingredients: 3 chicken breasts Marinade: 2 tbsp olive oil, 1 tsp salt, 1 tsp pepper, 1 tsp paprika, 1 tsp chili flakes 4 tbsp butter 1 large onion sliced 2 tbsp almond flour ½ cup chicken broth 2/3 cup HWC ¼ cup sour cream ½ tsp salt ½ tsp pepper 1 tsp thyme ¼ tsp xanthan gum (optional for thickening)
