Creamy Spinach Mushroom Pork Chops

Ingredients

  • 4 pork chops

  • Salt & pepper to taste

  • 1 tbsp avocado oil

  • 2 tbsp butter (divided)

  • 8 oz mini portobello mushrooms, sliced

  • 3 garlic cloves, minced

  • 1 tsp Italian seasoning

  • 1 tbsp almond flour

  • ½ cup chicken broth

  • ½ tsp lemon juice

  • ¾ cup heavy whipping cream

  • ½ cup grated parmesan cheese

  • 2 cups baby spinach


Instructions

  1. Season & Sear Season pork chops with salt and pepper on both sides. Heat a skillet over medium-high heat with avocado oil and 1 tbsp butter. Cook pork chops for about 4 minutes per side until golden. Remove and set aside.

  2. Build the Sauce Add remaining butter to the skillet along with mushrooms, garlic, and Italian seasoning. Sauté for 5 minutes until mushrooms soften.

  3. Thicken It Up Sprinkle in almond flour and cook for 1 minute. Pour in chicken broth and lemon juice, letting it simmer for a couple minutes.

  4. Make It Creamy Add heavy whipping cream and parmesan cheese. Stir until the sauce begins to thicken.

  5. Finish Strong Return pork chops to the pan and add spinach. Remove from heat and let the spinach wilt naturally.
