Blueberry Cobbler - Low Carb



Blueberry Cobbler with ice cream on top and it’s all low carb... Hello happiness! This cobbler recipe is SO easy and I just used store bought sugar free ice cream to top it off.


In a greased glass dish add 2 cups of fresh blueberries.


Next, in a separate bowl, mix butter and sweeter until smooth. Then add 2 eggs & vanilla extract and blend.


Last is the dry ingredients: mix in the almond flour, baking powder and salt.


Then just pour over top of the blueberries and smooth out.


Bake at 375 degrees for 30-35 minutes, let cool for 5 minutes, then top with whip cream or low carb ice cream and serve!


Ingredients: 2 cups fresh Blueberries ¼ cup Swerve ½ cup softened Butter 2 Eggs 1 tsp Vanilla ½ cup Almond flour ½ tsp Baking powder ¼ tsp Salt
