Great appetizer for the weekend…
Shrimp Cucumber Bites
These little guys are AMAZING! Super simple and easy to whip up and perfectly low carb. In a bowl evenly coat your shrimp with seasoning.
1 pound shrimp (deveined and no tail) 2 tsp Chipotle seasoning (or other favorite flavor) I cooked in 2 tbsp bacon grease or oil for 3 minutes on both sides. Mash up your avocado topping, I use cilantro but you can leave it out if ya don’t like it.
1 avocado 2 tsp lime juice 1/4 tsp salt 1 tbsp cilantro 1/4 cup chopped onion
Crush these up for a little added crunch. Whisps (Parmesan)
Cut up a cucumber and put a small spoonful of topping then your shrimp and crushed crackers.
