My FAMOUS Low Carb Tuscan Chicken!


My Famous Low Carb Tuscan Chicken

Ingredients:

- 3 chicken breasts

- 2 tbsp olive oil

- 2 tbsp lemon pepper

- ½ cup chopped red onion

- 1 tsp minced garlic

- 1 cup chicken broth

- 1 ½ cups heavy whipping cream

- 1 cup parmesan cheese

- 1 package McCormick’s Tuscan Seasoning

- ½ cup sundried tomatoes

- 2 cups baby spinach



Simple recipe to mix up the weekly menu. I served it with some roasted veggies.


I add 3 chicken breasts cut in half seasoned with lemon pepper to 2 tablespoons of olive oil in a skillet.

Once cooked (med/high heat for 3 minutes on each side), set aside.


In the same skillet, add ½ cup chopped red onion and 1 teaspoon of minced garlic. Cook until browned.

Then add 1 cup of chicken broth and 1 ½ cups of heavy whipping cream and bring to a simmer for 1 minute.

Next, add 1 cup of parmesan Cheese and stir until melted.

Then add a package of McCormick’s Tuscan Seasoning and ½ cup sundried tomatoes.


Throw in a couple cups of baby spinach and stir until slightly wilted.


Just pour over chicken and serve!
