Low Carb Mexican Breakfast Casserole


Sharing the Mexican version of my super popular breakfast casserole mostly cuz my daughter asked me to make if for dinner. So good and super filling.


Start with adding 1 ½ tbsp of Taco Seasoning, this one is my fave as it’s completely sugar free (Taco Tuesday by Flavor God), to 1 lbs of ground sausage.


In a bowl combine eggs and heavy whipping cream and whisk together.


Place the sausage in the bottom of a casserole dish and cover with a drained can of Rotel then pour the eggs over top. Sprinkle Mexican blend shredded cheese over that and bake at 375 for 35 minutes.


Let sit for 5 minutes before serving. We top ours with salsa and sour cream, it’s a huge family fave.


Ingredients

1 lb ground sausage

1 ½ tbsp Taco Seasoning (I use Taco Tuesday from FlavorGod)

9 eggs

1 cup HWC

1 10 oz can of drained Rotel

2 cups Mexican Blend, shredded cheese

Top with Salsa and Sour Cream
