Low Carb High Protein Peanut Butter Cup Ice Cream

Low Carb / High Protein Ice Cream!

Grab any carton of your favorite low carb vanilla Greek yogurt (lots of brand options Too Good, Oikos, Keto Ratio, etc).


Stir in 1 Tbsp of low sugar peanut or almond butter (I melt mine in the microwave for 45 seconds)


Top with melted chocolate (1/4 cup of sugar free chocolate chips cooked in 45 second intervals in the microwave, stirring in between)


Crush about 10 almonds and place on top along with sprinkling some coarse salt.

Freeze for 1 hour

I couldn’t eat all of this! Too filling for me so it’s great to leave in the freezer and pop out when I just want something sweet.
