Low Carb Chicken Caesar Salad Pizza


This viral recipe by Low Carb Mama did NOT disappoint.  It’s definitely more ingredients than my usual simple recipes but it was totally worth it.


The crust is just canned chicken, an egg, grated parmesan cheese, garlic powder and crushed red pepper.

Mix it really well to not leave any chunks.


Pre heat the oven to 375.


Place the chicken mixture on parchment paper on top of a baking pan and spread out into a pizza shape.  Ya wanna get it to about ¼ inch thick.


Bake for 40 minutes


Next it’s on to the dressing.

Combine ½ cup mayonnaise, ¼ cup sour cream, 1 ½ tsp of optional anchovy paste, 1 tbsp minced garlic, 2 ½ tbsp olive oil, the zest of ½ a lemon, 2 ½ tbsp lemon juice, 1 ½ tsp Dijon mustard, 1 tbsp worcestereshire sauce, ½ tsp cracked black pepper, ¼ cup of shredded parmesan cheese and salt to taste.

Mix t ogether and pour just enough on top of the slightly cooled pizza crust to cover it.


Cut up 1 heart of romaine lettuce and toss in the rest of the dressing and then cover the pizza crust.  Top with some shaved parmesan cheese and more cracked pepper.


This was sooo good! 


Crust

24 oz canned chicken, drained

1 egg

½ cup grated parmesan cheese

1 tsp garlic powder

½ tsp crushed red pepper

 

Dressing:

½ cup mayonnaise

¼ cup sour cream

1 ½ tsp of optional anchovy paste

1 tbsp minced garlic

 2 ½ tbsp olive oil

The zest of ½ a lemon

2 ½ tbsp lemon juice

1 ½ tsp Dijon mustard

1 tbsp worcestereshire sauce

½ tsp cracked black pepper

¼ cup of shredded parmesan cheese

salt to taste.
