🥗 Low Carb BLT Chicken Salad – A Summer Favorite!

When the temps start climbing, I don’t crave heavy meals—I crave fresh, flavorful, and EASY. And this Low Carb BLT Chicken Salad checks all the boxes. It’s creamy, crunchy, savory, and just a little tangy, with that BLT flavor we all know and love… minus the bread, and minus the carb crash.

This recipe came in clutch over the weekend when I wanted something quick to prep ahead and satisfying enough to keep me from grazing all day. Bonus: it's packed with protein, good fats, and just a couple of carbs per serving.

Whether you're living low-carb, keto, or just looking for a better-for-you lunch option, this one is a must-try!


🛒 Ingredients:

  • 2 cooked and shredded chicken breasts (about 12 oz total)Tip: You can also use canned chicken if you're in a pinch!

  • ½ cup mayonnaise

  • ½ cup plain Greek yogurt (I use whole milk for creaminess)

  • 1 celery stalk, finely chopped

  • 2 tablespoons chopped red onion

  • 1 ½ cups halved cherry tomatoes

  • 1 cup shredded Colby Jack cheese

  • 6 slices of bacon, cooked and crumbled

  • Salt and pepper to taste

  • Romaine lettuce leaves (for serving)


🥣 Instructions:

  1. In a large bowl, combine shredded chicken, mayo, Greek yogurt, celery, onion, tomatoes, cheese, and crumbled bacon.

  2. Add salt and pepper to taste. If your chicken wasn’t pre-seasoned, don’t skip this step.

  3. Mix well until everything is coated evenly.

  4. Scoop into crisp romaine lettuce leaves and serve as lettuce wraps, or enjoy with a fork straight from the bowl!
