Keto Lemon Pound Cake
Lemon Pound Cake and it’s KETO! So freaking good and doesn’t put me off course!
Add lemon juice to coconut oil, monk fruit and eggs. Whisk together.
In a separate bowl add baking powder to almond flour and coconut flour and stir together.
Pour your wet ingredients into the flour mixture and stir it up and then add some lemon zest.
Place in a sprayed loaf pan.
Bake it at 350 degrees for 15 minutes then lower the temperature to 325 and bake for another 35 minutes.
Let cool and then mix up your icing. Pour over the pound cake, then refrigerate for a few minutes.
Glaze: 1 cup Powdered Swerve Sweetener 2 tbsp Lemon Juice 2 tbsp Water
