Keto Broccoli Cheddar Soup



So yummy and super filling!


Start with chopping up 4 cups of broccoli

In a large pan saute ½ a chopped onion in 1 full stick of butter

Add 1 tsp salt, 1 tsp pepper and 2 tbsp almond flour and stir for 2 minutes

Add the broccoli into the pan and cover with the mixture

Pour in 3 cups of chicken broth and 2 cups of heavy whipping cream and bring to a boil (boil longer for softer broccoli)

Set to simmer and add 16 ounces of shredded cheddar cheese and stir until cheese in melted and add 1 tsp of xanthan gum and stir until thickened.

Serve warm… This was more popular than I even imagined in my house - teenager approved!

4 cups Broccoli

1 stick Butter

½ chopped Onion

1 tsp Salt

1 tsp Pepper

2 tbsp Almond Flour

3 cups Chicken Broth

2 cups Heavy Whipping Cream

16 oz shredded Cheddar Cheese

1 tsp Xanthan Gum
