One Pan, Low Carb Taco Casserole

Save this whether you are Low Carb or not... it's just that GOOD!

This recipe has officially earned a permanent spot in my Top 5. And honestly? That's saying a lot — because I've tested a LOT of meals over the years while losing 70 lbs and keeping it off.

One pan. Low carb. Absolutely loaded with flavor. This is the kind of dinner that makes you forget you're eating clean.


I sautéed half an onion and browned 2 lbs of 90% lean ground beef. After draining it, I added the lowest-sugar taco seasoning I could find — McCormick Original works great, or you can make your own if you want full control over the ingredients.


In a separate bowl, I combined cottage cheese and a can of Rotel, then spread that mixture evenly over the beef. Topped it with shredded Mexican blend cheese, jalapeños, and green onions — then baked it until bubbly and golden.


When it comes out of the oven, that's where the fun starts. Top it with whatever speaks TACO to you. I love mine with Quest chips on the side for that crunch without the carb hit.

This is so good. I genuinely think non-low-carb people would make this on repeat too.

Based on 90% lean ground beef, McCormick Original taco seasoning, 2% cottage cheese


Ingredients

  • 2 lbs ground beef (90% lean)

  • ½ chopped onion

  • 1 package taco seasoning (lowest sugar you can find)

  • 16 oz cottage cheese (2%)

  • 10 oz can of Rotel

  • 2 cups shredded Mexican blend cheese

  • 2 tbsp diced green onions

  • Sliced jalapeños

  • Toppings of choice (Quest chips, sour cream, salsa, avocado…)


Directions

  1. Sauté ½ chopped onion in a large oven-safe skillet over medium heat until softened.

  2. Add ground beef and brown completely. Drain excess fat.

  3. Stir in taco seasoning according to package directions.

  4. In a bowl, combine cottage cheese and the can of Rotel. Mix well.

  5. Spread the cottage cheese mixture evenly over the seasoned beef.

  6. Top with shredded Mexican blend cheese, sliced jalapeños, and green onions.

  7. Bake at 375°F for 20 minutes until the cheese is melted and bubbly.

  8. Remove from oven and top with your favorite taco toppings. Serve immediately.
