Low Carb Pumpkin Cheesecake Chaffles


This is one of my ALL time favorite Chaffle Recipes. Pumpkin Cheesecake? What’s not to love here? I cannot believe it’s low carb, it tastes sooo good!


Don’t be scared by the number of ingredients, this is really simple. Just mix all of them together in a bowl and pour ½ into the Chaffle maker as this makes 2 chaffles and possibly even 3.


The frosting is easy, just cream cheese, powdered sweetener and vanilla.


After assembling the chaffles with the frosting in the middle, I put some Cool Whip, pecans and sugar free syrup on top, my favorite brand, by far, is RXSugar.

It’s the only one I have tried that doesn’t taste fake or have a weird after taste.


Y’all save this recipe! It’s a 10 out of 10!


Chaffle Ingredients:

1 egg

½ cup mozzarella cheese

1 ½ tbsp pumpkin purree

1 tbsp almond flour

1 tbsp brown sugar

2 tsp cream cheese

2 tsp HWC

½ tsp pumpkin pie spice

½ tsp baking powder

½ tsp vanilla

1 tsp sugar free maple syrup


Frosting Ingredients:

2 tbsp cream cheese

1 tbsp powdered sweetener

¼ tsp vanilla
