Low Carb One Pan Chicken Dinner

If you love meals that feel comforting, flavorful, and family-friendly while still helping you stay on track… this recipe is one of my favorites.

I’ve lost 70 pounds eating meals like this. Not complicated. Not fancy. Just high protein, low carb meals that actually keep me satisfied.

And this one was SUCH a hit that my daughter asked me to make it again the very next night… which is why I’m very thankful I bought extra mushrooms 😂

This creamy mushroom chicken is rich, cheesy, simple, and perfect for busy nights when you want something that tastes indulgent without blowing your goals.


Low Carb One Pan Chicken Dinner

Ingredients

  • 2 chicken breasts, halved

  • Salt, pepper, garlic powder, and onion powder

  • 8 oz sliced portobello mushrooms

  • 1 tbsp butter

  • 2 tbsp avocado oil, divided

  • 2 tbsp liquid aminos

  • 2 tsp dried thyme

  • ¼ cup heavy whipping cream

  • 1½ cups mozzarella cheese

  • ½ cup parmesan cheese


Instructions

Step 1: Cook the Mushrooms

In a large oven-safe skillet, add:

  • 1 tbsp butter

  • 1 tbsp avocado oil

  • sliced mushrooms

Cook for a few minutes until softened.

Add:

  • liquid aminos

  • dried thyme

Continue cooking for about 5 minutes until the mushrooms are tender and flavorful. Remove mushrooms from skillet and set aside.


Step 2: Cook the Chicken

Add the remaining avocado oil to the skillet.

Season the chicken breasts with:

  • salt

  • pepper

  • garlic powder

  • onion powder

Place chicken into the skillet and cook about 3 minutes per side.


Step 3: Make it Creamy + Cheesy

Add the mushrooms back to the skillet.

Pour in the heavy whipping cream and spoon over the chicken.

Top with:

  • mozzarella cheese

  • parmesan cheese

Bake at 400°F for 15 minutes or until chicken is cooked through and cheese is melted and bubbly.

Why Low Carb Finally Became Sustainable for Me

One of the hardest parts about trying to stay low carb for me wasn’t recipes.
