Low Carb "Faux"tato Soup


Keto Ham and “Potato” Soup

This is my very favorite meal in the Fall. I’m not always a fan of things made with cauliflower but this one LEGIT tastes like potatoes.


Start with chopping up 2 heads of cauliflower and boil until tender (about 8 minutes) then drain and set aside, keeping the liquid.


Saute ½ chopped red onion in a ¼ cup of butter.


Add 2 tbsp of almond flour

1 tsp of red pepper flakes

Salt and pepper to taste (really doesn’t need much salt)

Just text - Stir for at least 2 minutes


Add 2 cups of chicken broth

1 cup of liquid from the cooked cauliflower

Bring to a boil


Add in your cauliflower

1 ½ cups of heavy whipping cream

3 cups of cubed ham

4 cups of shredded cheese

Lower heat and simmer for about 10-15 minutes
