Keto Jalapeno Popper, Shredded Chicken Soup


Nothing says winter cooking like SOUP!

Looking for a low carb, super filling soup?

This one checks all the boxes and is absolutely delicious.

Be sure to save it for later.

Start with sautéing ½ a small onion and chopped red pepper in butter.

Next add some minced garlic and a couple of diced jalapenos.

Add 4 oz of cream cheese and melt then slowly add 4 cups of chicken broth.

Pour in 3 cups of shredded, cooked chicken (check my other recipes for my Instantpot Shredded Chicken Recipe) and heavy whipping cream and let simmer for 15 minutes.

Add 4 slices of crispy bacon pieces, shredded cheddar cheese, salt and pepper to taste and to thicken add 1 tsp of xanthan gum and let simmer 5 more minutes.

Top with shredded cheese, more bacon and sliced jalapenos

Less than 5 net carbs per serving

Ingredients:

· 3 cups Chicken shredded

· 2 tbsp Butter

· 1/2 Small Onion chopped

· 1 Red Bell Pepper chopped

· 2 Jalapeno Peppers deseeded and finely chopped

· 4 cups Chicken Broth

· 1/2 cup Heavy Whipping Cream

· 4 ounces Cream Cheese

· 1 cup Cheddar Cheese shredded

· 4 slices of Crispy Bacon Pieces

· 2 tsp Garlic minced
