This Low Carb Side Salad has been on repeat at our house all summer — cool, crunchy, and packed with flavor without any of the guilt. It’s the kind of recipe that gets better the longer it sits, which makes it perfect for meal prep, potlucks, or just keeping a big bowl of it in the fridge for whenever you need something fast and satisfying.
What You’ll Need (Makes 6 Servings)
• 2 cups halved cherry tomatoes
• 1 large chopped cucumber
• 1 cup chopped pepperoni
• 1 cup feta cheese
• 1/2 tsp each: pepper, salt, oregano, basil
• 1/2 packet Zesty Italian dressing
• 3 tbsp olive oil
• Juice of 1/2 lemon
How to Make It
Mix everything together in a large bowl, cover, and let it chill in the fridge for at least an hour. The longer it sits, the better it gets — honestly, it’s even better the next day.
Note to self: red onion would’ve taken this over the top. Adding it next time.
