Chicken & Spinach Arrabbiata
This low carb recipe was a hit with the whole family and the leftovers are great too. This is packed full of protein as well which made my muscle building teenager super happy.
I started with adding my favorite Italian seasonings to 3 shredded chicken breasts.
The amount of the seasoning is up to you, don’t overthink it. You can’t screw this up.
Next cover with 2 cups of ricotta cheese and spread out evenly then pour a jar of Rao’s Arrabbiata sauce.
To add some extra nutrients, I use baby spinach leaves, my kids never seem to mind this since it doesn’t affect the taste.
Lastly, I cover with shredded mozzarella cheese and then sprinkle parmesan cheese on top. Some chopped fresh basil is optional but I love it.
Bake this at 375 degrees for 25-30 minutes.
