I took 2 large chicken breasts, halved them and pounded them flat.
Salt and pepper them.
In a bowl I made the spinach stuffing (I might add powdered ranch dressing next time)
Put the mixture on the chicken and roll up securing with some toothpicks.
Then I placed ½ cooked bacon around the chicken and secured with more toothpicks baking at 350 for 40 minutes.
Less than 7 net carbs and great paired with asparagus.
Ingredients
2 large chicken breasts
Salt and Pepper
8 oz frozen spinach (thaw and pat dry)
8 oz cream cheese softened
½ tsp onion powder
½ tsp garlic powder
10 slices of bacon (cook ½ way through before wrapping)
