Low Carb Taco Stuffed Peppers

Taco Tuesday has gone low carb!

Start with baking 3 peppers that have been cut in half and placed in a baking dish with ¼ inch of water for 20 minutes at 400 degrees.

Brown and drain 1 lb of ground beef and add 2 tbsp of your favorite taco seasoning (I use Taco Tuesday by FlavorGod), and a can of Rotel or diced tomatoes and chilies.

Spoon the mixture into the peppers and cover with shredded cheese and bake another 10 minutes. Top with whatever you like. I used taco sauce and sour cream.

Next time, I’ll probably double the meat mixture for this recipe.

Simple and tasty and less than 7 net carbs per serving.

3 Peppers

1 lbs ground beef

2 tbsp Taco Seasoning (I used Taco Tuesday by Flavor God)

1 can of Rotel (10 oz)

2 cups of shredded Mexican blend cheese

Any toppings you like
